Beer Can Chicken

Not to sure if you know but I like to cook. Am I a gourmet top chef wannabe, nope just a domestic cosmopolitan woman who believes that you can save money by making one meal a week. So here's one of my favorite meals, Beer Can Chicken. It's cheap, it's fun and it taste amazing.



Beer Can Chicken

1 Whole Chicken between 3-4 pounds
1 garlic clove chopped
1 Lime cut in half followed by other half cut into half giving you 3 sections
Dry Rub
Paprika, salt, pepper, onion,  dry garlic, cilantro, cumin and oregano)
1 can of Budweiser Beer 

Directions
Preheat oven to 350 degrees



Remove giblets from chicken, if you like brine overnight in a salt and water bath. Or wash both inner and outer part of chicken and pat dry.




Take dry rub moisture and rub on the outer part of the chicken, pulling back some of the skin and apply the rub there as well as slices of garlic, also place rub in cavity of chicken. Place one half of lime on top part of chicken cavity place the additional lime sections under skin at the breast and under skin at the back/thigh area. 


Open can of beer, pour a third of it into roasting pan. Use a fork to poke a few 5 in total holes in the upper part of the can..  Place can of beer in center of roasting pan.





Grabbing chicken by the legs, position the can into the cavity so that chicken is sitting on top of the beer can and it’s sturdy in roasting pan. Place pan into oven and bake for 1 hour 45 minutes or until inner temperature of chicken is 180 degrees. Let chicken rest for 15 minutes, use gloves and tongues to remove beer can.
